Lumpia Ubod (Eggroll)

Ingredients

  • 2 tbsps. cooking oil
  • 2 cloves garlic crushed
  • 1 small onion, chopped
  • 1/4 c. cooked ham, chopped
  • 1/4 k. boiled pork, diced
  • 1/2 c. shrimps, chopped
  • 1/2 c. cooked chick peas
  • 1 c. snap beans or habituelas, cut in diagonal strips
  • 1/2 k. ubod in match-like strips (heart of palm)
  • 2 c. cabbage, shredded
  • 2 tsps. salt
  • 24 pcs. lettuce leaves or spring onions
  • 1 c. carrots, julienned
  • Ground peanuts for toppings (optional)

Preparation

  • Brown garlic in hot cooking oil, add onions, cook slowly until soft
  • Add pork, ham, shrimps and chickpeas
  • Simmer for 5 minutes
  • Combine carrots, stringbeans and ubod
  • Cook covered until veggies are half done
  • Drain and season
  • Let cool
  • Set broth aside for brown sauce
  • Wrap mixture in home-made wrapper lined with lettuce leaves or spring onions
  • Serve with brown sauce. May be topped with grounded peanuts and half fried crushed garlic.
